Here is a pattern for a leather "poncho" from Angmagssalik in Greenland that I scanned from Margarethe Hald's Ancient Danish Textiles from Bogs and Burials. It's actually made from polar bear skin. I imagine something similar made from an Irish beast with it's full winter coat (any native cattle breeds still extant?) would work. The coat would give extra impact absorbsion over bare leather too.
